An adsorbent captures molecules on its surface — the odor compounds stick and are held. Baking soda, zeolite, and activated carbon all work this way with different capacities.
Adsorbents are passive odor tools — they reduce ambient smell until their binding sites fill, then they stop working and need replacement.
